Five Scrumptious Summer Salads

It’s not quite pool time here in Arizona but it is definitely getting to be salad time. I love a good salad full of fresh delicious produce and tangy dressings. Add some grilled protein and you have yourself a complete meal in a bowl…without having to turn on your oven! I’m always on the look out for my next favorite salad recipe. Here are a few of the the front-runners.

I call this first one my BRAIN FOOD Salad because it is packed with nutrients known to be good for your brain (Lord knows, I need all the help I can get). I got the original recipe from Ali at Gimme Some Oven but I substitute her Chia Seed Dressing for a a  blood orange vinaigrette dressing. Either way, this salad is so delicious and nutritious.

I just pinned this next salad from This Healthy Table and I can’t wait to try it. It seems like such a unique blend of flavors. Blackberries grow like weeds in Oregon and nothing is better than pulling them right off the bush and into your mouth (okay, maybe a quick rinse first). I have to remember this recipe when I’m visiting this summer.

My favorite salads are those that mix fruits and veggies with leafy greens. This sounds like another fabulous summer option; perfect for late June when Rainier cherries hit the market.

I love a good potato salad but I struggle when there’s a strong mayo flavor. I’m excited to try this German Potato Salad recipe as an alternative – NO mayo! And it has bacon… And you get to drink a beer with it (the picture says so). How could you go wrong?

Last but certainly not least is the Avocado Feta Crack Dip from Gather for Bread. It’s not really a salad but it seems like a fantastic alternative to guacamole. Wait! Did I really just say that?! I should say it’s a fantastic accompaniment to guacamole because one can never have enough avocado! One pinner wrote that she added some chopped cucumber to the recipe which sounds fabulous.

Summer is the perfect time to fill up on nutritious salads. You can get most of your items at local Farmer’s Markets and many of them can be made ahead of time. Yep, summertime = Good Eatin’!
