 I LOVE POTATO WAFFLES!


They are crispy on the outside, flaky on the inside and have pockets to hold extra yumminess. What’s not to like?! This recipe is one of my favorites because it works for breakfast, lunch or dinner. I’ve included different variations so you could pretty much eat a potato waffle every week and never get tired of it. I think it’s the perfect accompaniment to a lazy morning, a cup of coffee and the crossword puzzle. What do you think? 

 

Potato Waffles

These waffles are super versatile and equally yummy for breakfast, lunch or dinner.

Ingredients

BASIC POTATO WAFFLE RECIPE

  • 1 BAG ALEXIA HASHED BROWNS
  • 1/2 CUP ZUCCHINI, SHREDDED AND SQUEEZED TO REMOVE WATER
  • 3 EGGS, BEATEN
  • 1/4 CUP MILK
  • 1/4 CUP SOUR CREAM OR PLAIN YOGURT
  • 1/4 CUP CHOPPED FRESH CHIVES OR PARSLEY
  • 3/4 CUP CHEESE, SHREDDED (CHEDDAR, JACK OR PROVOLONE)
  • SALT AND PEPPER TO TASTE
  • AS NEEDED COOKING SPRAY FOR WAFFLE IRON

RECIPE VARIATIONS - DO THE BASIC POTATO WAFFLE RECIPE PLUS...

    The Garden Waffle

    • 1 Carrot, shredded; in lieu of basic recipe zucchini
    • 1/2 Cup Cauliflower rice or mash
    • 1/2 Cup Broccoli, chopped
    • 1/4 Cup Red Bell Pepper, diced
    • 3/4 Cup Shredded Provolone cheese; in lieu of basic recipe cheese
    • Top with sour cream and chopped parsley

    The Fiesta Waffle

    • 1/2 lb Chorizo, cooked and crumbled
    • 1/2 Cup Mild green chilies, diced
    • 1/4 Cup Green onions, chopped
    • 1/4 Cup Cilantro, chopped; reserve some for topping
    • 3/4 Cup Shredded cheddar or pepper jack cheese; in lieu of basic recipe cheese
    • Top with salsa, crema mexicana and cilantro

    The Oink Waffle

    • 1/2 Cup, EACH Cooked/crumbled sausage and pancetta or bacon
    • 1/2 Cup Diced ham
    • 1 tbsp Fresh Rosemary, finely chopped
    • 3/4 Cup Shredded cheddar or jack cheese; in lieu of basic recipe cheese
    • Top with garlic and onion saute and a dollop of sour cream

    Bon Vivant Waffle

    • 1 Cup Fresh mushrooms, chopped and sauteed
    • 1/2 Cup Leeks, chopped and sauteed
    • 1 tbsp, EACH Fresh Thyme and marjoram, chopped
    • 3/4 Cup Shredded Gruyere cheese; in lieu of basic recipe cheese
    • Top with Dijon sour cream and a sprinkle of thyme

    The Fall Comfort Waffle

    • 1/2 Cup Cauliflower rice; in lieu of basic recipe zucchini
    • 3/4 Cup Roasted butternut or acorn squash, cubed
    • 1/2 Tube Jimmy Dean Sage Sausage, cooked/crumbled
    • 1 tbsp Fresh Thyme, chopped
    • 1 pinch Nutmeg
    • Top with sauteed red onion and a dollop of ricotta or crumbled goat cheese; in lieu of basic recipe cheese
    • optional Maple syrup drizzle over top

    Instructions

    • SUPER SIMPLE!
      ADD ALL YOUR INGREDIENTS (EXCEPT TOPPINGS) TO A BOWL AND MIX. HEAT UP YOUR WAFFLE IRON. SPRAY THE IRON GENEROUSLY WITH COOKING SPRAY. SPREAD ABOUT 1 CUP OF THE WAFFLE MIX ONTO THE IRON (DEPENDS ON SIZE OF YOUR WAFFLE IRON). COOK AND ENJOY!

        Thanks Vikki. I made a version of the Oink for myself and my Veggie husband tried it – even HE had to admit it was pretty darn tasty!
